Wedding Catering

What should a wedding caterer explain about allergen cross-contact?

Answer

Direct answer

The caterer should explain how unintended allergen transfer is controlled during preparation, storage and serving, and where uncertainty remains.

Ask about shared equipment, oils, utensils and buffet handling rather than checking only the recipe. Keep the guest's specific allergy distinct from a dietary preference or vegan label. Obtain a clear answer from someone responsible for the kitchen. Removing a visible ingredient after cooking does not establish that a dish is suitable, and staff should not promise allergen-free food without an appropriate basis.
