How can someone distinguish a genuine deal-breaker from a preference?

A deal-breaker protects a core value, safety need or life plan and would justify declining an otherwise suitable proposal. A preference improves attractiveness but can be weighed against the whole person. One useful test is to name the future decision behind the criterion: “same city” may actually mean caring for parents, while “specific degree” may stand for intellectual companionship or income assumptions. If the reason disappears when challenged, the criterion may be a proxy or habit. Neither label should be used to pressure someone into abandoning a boundary.
